Kinetic parameters of PEPC, AlAT and AsAT in the S. dendroidies, S. atissima, S. bicolor and N. mucranata species have been studied comparatively depending on the substrate concentration and temperature. PEPC activity was higher in S. bicolor and N. mucranata compared with S. dendroidies and S. altissima. The maximum reaction rate (Vmax) for alanine aminotransferase and aspartate aminotransferase was higher in S. bicolor və N. mucranata compared with S. dendroidies and S. altissima. In the studied species of the Chenopadiaceae family the rise in temperature from 5oC to 10oC caused approximately 3-4 fold increase in PEPC activity, and ~1.2-1.3 fold increase was detected for every 10oC rise in temperature. Maximum PEPC activity was observed at 35оC. Contrary to PEPC due to the thermostability of transferases AlAT and AsAT activities sharply decreased at 55oC.
